Virtual Worship with Beth Manchester-Howell on Sunday, January 2nd, 2022: “Breakfast Church” – Virtual Only

Though this meal is “bring your own breakfast,” sharing recipes is another way to create community in this challenging time.  I have shared two of our family favorites here and on the church Facebook page.  Please consider sharing your favorite breakfast recipes with our church family.  


Beth’s Sour Milk Pancakes
2 cups whole wheat flour (I use King Arthur)
1 tablespoon baking powder
1 teaspoon baking soda
1 tablespoon sugar
1 teaspoon cinnamon


Mix the dry ingredients and add : 
2 1/4 cups sour milk (milk with one tablespoon lemon juice)
2 tablespoons oil
2 eggs


Cook on a hot greased skillet.  I use a non-stick skillet with a tablespoon of oil.


Elvis Muffins (or bread, or cake…)
¼ cup margarine
¾ cup sugar
¼ peanut butter
3 mashed banana (the riper, the better)
½ cup applesauce (I use the snack size cups)
½ cup soy milk or dairy milk
2 ¼ cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
As many chocolate chips or M&M’s as you want, I put about a handful.


Pre-heat oven to 350 and spray muffin tins with oil.
Cream together sugar and margarine.  Add in peanut butter.  When well mixed, add banana and applesauce.  Mix and stir in milk.Mix together dry ingredients in a separate bowl and add them to the fruit mixture.  Mix until just moist and stir in chocolate chips.Spoon into muffin tins and bake for 25-30 minutes.  This recipe makes 12 muffins when I make it, but I have pretty large tins.
